Painting and decorating foods requires the use of food-grade inks that must be suitable for the surface, such as icing, onto which they're being painted (C&I 2007, 9, 17). Few inks, however, have the right properties, such as viscosity, surface tension and drying times, to make them suitable for use with both foods and ink jet printers. Some are a bit toxic to humans, while others can't be applied to edible surfaces because their water content is too high or they are too smeary or bleed.
